It's fall and it's the perfect time to pull out those crockpots and cook your dinners either while you're at work or, like me, overnight. I make easy crockpot meals year round because it gets pretty hot in New Orleans and I'm just not the one to be cooking over a stove in this heat. Or, I'd rather be doing something else than cooking literally. I've learned that I pretty much use the same ingredients, I just switch up the meats. I mainly cook meals in the crockpot when I'm going for a rice and gravy kind of dish, soups or stews. FYI... this won't be a long post because I'm sure you want to know about the food and not about me lol. I'm not judging you!
Before I get into the crockpot meals and their recipes, let's start off with my basic ingredients:
water
olive oil
garlic powder
Tony's seasoning
salt
pepper
onions
bell peppers
potatoes
carrots
celery
Again, all I do is switch up my meat and cook rice to go with each meal and BOOM..... dinner is served!!!!! I take after my grandmother who just didn't measure what she put in her foods. If you asked her, she'd say, "Oh I don't know. I just put a little of this....and a pinch of that in it." So below are my favorite crockpot meals with measured ingredients for you thanks to people on Pinterest lol.
Beef Stew

Serves 8-10
Meat:
1 1/2 lbs Beef bottom or chuck
2 tbsp Montreal steak seasoning
Produce:
2 cloves Garlic
2 tsp Garlic powder
1 Onion, medium to large
Canned Goods:
2 1/2 cups Beef stock or broth
Condiments:
3 tbsp Worchestershire sauce
Dairy:
2 tbsp Butter
Liquids:
1/4 cup Water plus
Other:
3 Medium carrots (peeled and diced into chunks)4 To 6 medium potatoes (washed and diced into chunks (peeled if desired))
Chicken Noodle Soup

1 - 1 1/2 pounds boneless, skinless chicken breasts, trimmed of excess fat
1 large yellow onion, diced
3 large carrots, peeled and sliced into coins
2 stalks celery, sliced
3 - 4 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 bay leaf (optional)
2 teaspoons chicken base (I use Better Than Bouillon brand) (optional but encouraged)
8 - 9 cups reduced sodium chicken broth
8 ounces egg noodles (wide or extra wide
fresh parsley, minced (for garnish)
Remember, these are just some basic ingredients but feel free to adjust them where needed that fits your diet or lifestyle. To me, it's all in the seasonings that makes these easy crockpot meals my favorites.
